I found a great recipe over at Michelle's blog, 5 Dinners 1 Hour, last week. You can subscribe to her 'Make 5' monthly meal plan in her sidebar...or be like me and just follow her blog for great recipe ideas a few times a month.
This recipe for Slow Cooked Baked Potato Soup really hit the spot...for our schedules and our stomachs! Since I did all of the preparations the morning of and she has hers stored in the refrigerator ready to go, I altered the recipe a little to fit my circumstances.
Slow Cooked Baked Potato Soup
In your slow cooker, combine:
32 ounce bag frozen, cubed hash brown potatoes
1/2 cup chopped onion
32 ounces chicken broth
1 cup water
Meanwhile, in a small bowl with a lid, combine:
1 cup milk
3 tablespoons flour
Store milk & flour mixture in refrigerator, until ready to use.
Cook potatoes on low for 6-8 hours.
30 minutes before serving, turn slow cooker to high and add milk/flour mixture.
Serve with shredded cheddar cheese, bacon bits and green onions.

perfect! I was looking for a baked potato soup recipe!
My hubby's favorite crockpot meal is swiss steak! I actually made it on Sunday. I cube up round steak (prefer the tenderized kind or cubed steak) into 2"x2" pieces, flour, and brown. Add them to the crockpot and cook covered in beef broth on high for 4 hours or low all day. Remove the meat from the broth and add gravy mix (I buy the big thing of brown gravy at Sam's). Add the meat back to the gravy and serve with mashed potatoes and King's Hawaiian Sweet Rolls...so delicious!

I checked out the 5 meals in 1 hour blog and loved it. I don't cook much anymore, but I may start back with some of these recipes.
